also, the hops all smelled great.  so I plan on going ahead with the 2 different dry hops.

 

keg 1: 2 oz cent, 3 oz mosaic

keg 2: 2 oz cent, 2 oz simcoe, 1 oz Amarillo

 

thoughts?

What about for keg 2 taking out the cents and using citra?

I think I have 2 oz of citra but it could be under as well.  I know I have some but it's only a little bit.  ordered more from Ted but that will probably not show up for a while since he hasn't even charged me for my order yet.

 

but anyway, not a bad idea.  even if I don't quite have 2 oz I could always use what I have and fill in the rest of the 2 oz with cent (not an actual sub I know).

everything seems to be going well so far.  I started around 62F on wednesday morning.  I've been slowly letting it creep up.  right now it's about 65F and I'm going to allow it to get up to 66F today.  pretty soon I think I'll have to put the space heater in there to continue the ramp.

 

normally I'd hold the temp down a little longer but my OG on this ended up being 1.060 so I want to make sure this thing attenuates as much as possible.

fermentation may be complete.  I'll be checking the gravity tonight if I have a chance.  crossing my fingers I made it down to 1.012.

1.02 last night but still cloudy as hell.  I'm going to leave it @ 70F for another couple of days and check it again.  the taste was great though.  I think I like the interaction of 002 and the citrus/fruit hops.

ha!  right now I'd call it cloudy.

 

I think the drez man might like this yeast if he hasn't tried it lately.

I have not used 002 or 1968 in years.  I have thought about giving it a try.

I feel like 002 could even be okay for denny.  fermented low at first it seems very clean to me.

If your 002 beer is not clear I would have to say it is still fermenting. That yeast will let you know when its done. Did you taste any diacetyl?

I did not.  but I've also been ramping the temperature up over the course of the fermentation so it probably got mostly cleaned up already.

you were right!  took the gravity last night and it was 1.012.  I turned off the heater (still upper 60s in there) and I'll probably start crashing it tonight.

Seemed good.

 

really it didn't taste a lot different from the hydro sample I pulled a couple of days before that.  and it couldn't finish soon enough - my other keg of AIPA just kicked!

this looks a lot darker than I expected.  still hazy right now but this is a very dark reddish/orange color right now.  it tastes about how I expected it to though so that's fine.  not even a hint of roast in there from the chocolate wheat which is what I was looking for.  I just wanted the bit of color adjustment - I guess I just went a little too far.

just tap the dry hopped kegs and lot's of potential here but I'll be sure once I work through the few pints of hop sludge.  I need to come up with a snazzy name.

 

ESAPA?  extra special american pale ale?  doesn't really roll off the tongue...
