Rye Stout

Based loosely on a northern brewer recipe, DJ's recipe and my own take on the whole thing.  thoughts are welcome.

 

10 gallon batch:

 

14 lbs US 2-row

5 lbs Rye Malt

0.75 lbs C75

0.25 lbs C120

1 lbs chocolate wheat

0.75 lbs roasted barley

 

mash @ 150F

30 min boil

 

2 oz nugget @ 30 min

1 oz mt hood @ 5 min

2 oz mt hood @ 0 min

 

ferment with 1450

 

SRM: 33

OG: 1.055

IBU: 39

I wish I had my recipe in front of me as it turned out really good and got a ribbon at a comp. But looking at yours I think it will be great, maybe some flaked barley?

I was waiting to finalize the grains but likely I'll get my sulfate up around 40 or 50 and my chloride up the 80-90 ppm range.  we'll have to see how much acidification I need though.

all I have right now is flaked wheat and flaked oats and I was hoping to avoid a trip to the LHBS.

had to change slightly.  replaced 1lb of rye with wheat (ran out of rye).  I also replaced 10 oz of the chocolate wheat with carafa III b/c I again ran out.  really cleaning out bin on this one!

I must have measured something wrong on the grain or things just went really well.  91% system efficiency???  might be a new record for me.

yeah.  I can't explain it.  I'm usually high around 80% for a beer like this.

down to 1.014 right now.  I think it still has a little to go though since I had some froth/foam on the top of my hydro sample.  tastes good though.  def some rye character coming through.

finished at 1.012.  I kegged it the other day and its carbed now.  super smooth with a nice dense tan head on it.  this is exactly what I was hoping for.

Nice, I'll have to see if I made any more tasting notes - doubtful.  Good old Cascades - I still use them a lot.

~20% rye + 1450= Full and smooth mouthfeel
