refrigeration isn't stopping botulism

but boiling for 15 minutes will destroy the toxin, but, that defeats the purpose of having a canned starter ou just open and use


Pressure cooking it to begin with should kill the botulism, refrigeration will prevent its growth. If you have jars that don't seal when pressure canning aren't you supposed to refrigerate them?

and consume quickly, or reprocess immediately, keeping it for more than a week is risky

 

the concern is the jar, lid, band, and funnel weren't also processed at 240F like the contents, everything has to reach 240f and stay there for the prescribed time to be sure

This thread inspired me (sort of). Decided to go ahead and pressure can 4 1qt starters.

This thread inspired me (sort of). Decided to go ahead and pressure can 4 1qt starters.

 

If you go to the trouble make a stirplate too.  More yeast with less wort.  Lately I've been harvesting and direct pitching.  Conicals are nice for that.

Believe it or not I still have my stir plate from the old greenboard group project. Lost my stir bar though.

Cool.  Canning is a pain though.  Don't let me stop you though.  Posted earlier that I can go from start to finish in 20 minutes for a 2.75L starter.  With a stirplate that is enough for my 11.5 gal batches.
