I'm not looking for any particular style.  I have some 2124.

my base grain options are munich, pils, vienna, US 2-row, some optic (10lbs) and some US pale ale (4-5lbs).  I have a good selection of specialty grains if needed.

I was thinking of making this somewhat hoppy.  I have a lot of mt hood and hallertau that won't get used much in my typical APAs, IPAs, etc.  I also have some motueka (~7 oz) that I could use.

this will be a 10 gallon batch.

any thoughts?

What if you made something in the realm of Sam Adams Boston Lager? I don't think that they use a Czech yeast for that beer but I think it would be good. Pilsner, some Munich or Vienna, some amount of crystal to get it to SRM 10 or so and then use the Mt. Hood for bittering and add a bunch of Hallertau late to get up into the 40-50 IBU range. I'm just thinking out loud but I plan to make something similar when I use my 2124... which I think I'm going to make a big starter for tomorrow.

An IPL w/ 2124 would be good.

is that basically a german pils?  I've never made one so that might not be a bad way to go.

that might be beer #2 with the yeast.

interested to hear how that turns out.  what hops?

Yes, basic Pils but a but hoppier!

My IPL used Equinox and Loral hops.  I had them and needed to try them in something so I did.  Equinox at 30 then 2:1 Loral/Equinox at WP and again in the DH.  Grain bill was:

13 Pils

1 Vienna

.75 Carapils

.75 Caravienne

Not 2124 but similar, Tomorrow morning, I'm making the Golden Doppelbock from D's BYO article using slurry from 34/70.

I made a starter with my 2124 this afternoon. I'm going to make a dark lager and an "American Premium" eventually and possibly a Vienna or Dunkel. But the first run is going to be an amber lager with Mandarina Bavaria hops.

6 lbs Weyermann Barke Pils
3 lbs Best Malz Munich 2
8 ounces Double Roasted Crystal
½ oz Carafa Special III
.40 ounces Magnum pellets 13.1% for 60
1 oz Mandarina Bavaria pellets 8.9% for 15
1 oz Mandarina Bavaria pellets 8.9% for 5
1 oz Mandarina Bavaria pellets 8.9% into the 175° whirlpool
Wyeast 2124 Bohemian Lager yeast

OG: 1.052, FG: 1.012, IBU: 46, SRM: 10, ABV: 5.0%

I'll mash at 150° and have equal parts chloride and sulfate (about 50ppm each). I'm looking at brewing on Sunday with a temp of about 20° or so. I haven't brewed since November so I'm ready to make some wort. Cheers.

I've had an IPL in mind for a while I hope to get to one of these days. 1.060-ish 70/30 Pils/Vienna, Lots of 2:1 Mandarina Bavaria:Cascade in the whirlpool and dry and 2124 (34/70)
