Took the day off work today, planning to brew batch #2.  The recipe I am using is basically the same as the Brewer's Best Imperial Blonde Ale but I bought the ingredients separately instead of buying the kit.

 

I will be doing a full boil (starting with about 6 gallons and boiling down to 5).

 

ingredients:

 

7 lbs pale LME

1 lb wheat DME

1 lb corn sugar

1 lb honey malt (steeping grain, steeped 20 mins at 160F)

1 oz Brewer's Gold ~1 hr

0.5 oz Cascade ~15 mins

0.5 oz Cascade ~5 mins

 

yeast: Wyeast 1335 (British Ale II)

 

estimated OG: 1.066

31.9 IBU

Color 10.2 SRM

 

I will probably get started here in a couple hours... critiques/thoughts/etc welcome (although I won't really be able to get any more/different ingredients in time).

Your beer will always be better of you use DME rather than LME as much as possible.

Definitely agree with this, from my experience with extract.

I usually prefer DME but they were out of pale until next week and I'm impatient.

yes DME always seems fresh, LME always seems to be darker than expected.

especially with extract!  really minimal/no advantage to a longer boil there.

Hop utilization? If you cut the boil time in half wouldn't you have to double your bittering hops?

Kegging it today or tomorrow.  Initial tasting seems like any other beer.


Hop utilization? If you cut the boil time in half wouldn't you have to double your bittering hops?

 

I found that if you go from a 60 min. to 20 min. boil you need to increase the bittering hops by 50%.

pretty minor difference probably.  I just view it as allowing my bittering hops to add a little bit of flavor.  if you are already using a high alpha acid hop for bittering the actual increase in an absolute sense isn't that great.  it might be a wash if you factor in propane?  I dunno.

I do not think it is linear, but correct you would need more bittering hops with a sub-hour boil. Brewing software should help or what Denny posted is reasonable that 1/3 the time requires 2 times the hops.

 

I'll also note that your wort likely stays in the temp range near boil for at least 5-10 minutes after you shut the burner off so the hops are still bittering once the gas is off.

yeah, IIRC hop utilization is a sliding scal

 

also, back towards the end of my extract days I was doing 30 minute boils, full volume but only adding hals the extract at the start and half @ 15 minutes

I've been doing a lot of testing of this for the new book.  So far it's been consistent.  But it's 50% more, not twice as much.
