can you set it to have a wide threshold for when it turns on?  although I guess those constantly circulate?

 

yeah, they constantly circulate, and pretty much just hold whatever temperature you set.

are we talking 5 gals of beer here?  I used to just move it to a warmer space.  5 gals of beer isn't that heavy.  if you are talking 10 gals I would def not recommend that

Unfortunately there's not a really good 'middle ground' spot in my house.  My choices are pretty much 65 degrees or 75 degrees.

temp stratification on your basement staircase?  I used to move my fermentor up the basement stairs to ramp the temp.
