Cream ale with a good corn flavor?

One of my favorite cream ales is El Toro. For me, the corn really stands out. Any of you guys ever brew a good batch where the corn takes the stage?

I like a good corn taste in the right beer but I'm in the minority in my club.
There's a recipe called cream of three crops or something like that. The few times I've brewed it I've bumped the flaked corn up or added some cracked corn to the mash. Came out well.

yeah, I understand that corn tasting beer isn't anywhere close to any trends.

5.5 lbs two row
2.5 lbs corn
1.0 lbs rice

1.00 oz Willamette [5.20%] (60 min) 

1.00 oz Crystal [3.50%] (60 min)

The HBT Cream of three crops is:

 

12 Two Row

4 Corn

1 Rice

 

for 11.5G so you have a bit more corn and rice in yours.  Personally I would just pick one hop and not bother mixing.  At 60 you will not even notice it. Small amount of a high aloha hop to get you in the 15 IBU range.  Insert my usual complaints on a 60 minute boil.

drez, would you do 2 oz of hops at 60 minutes, or would you scale that back?  Noticing the 11.5g on HBT uses 2 ozs.  I've never attempted to scale down to a 5 gallon batch.  Not really sure if hops go at the same ratio as grains.

and speaking of your 60 minute boil complaints, maybe i'll try this one with less if you don't mind advising a little more on time frames. 

 

Thanks for your advice and tips on my last brew.   I opened a bottle last night.  It had only been bottled for a week, but it was very drinkable.  I'm still considering buying some mini kegs, even though everyone has big complaints about them.

6g @ 75% efficiency OG 1.040

 

6# Two Row

2# corn

.5# rice

 

.5oz of a 10% alpha hop at 60 would get you 16.6 IBU.  I would go with something like Magnum/Horizon. 


If you want to go with a shorter boil and choose something like a 30 minute, .75 oz of 10% alpha hop will put you at about 17 IBU.

Hmm.  I don't have a grain mill and my usual supplier doesn't mill rice.   Would flaked rice work?

How about some minute rice from the grocery store?  Just throw it right in the mash.

seems like some 6-row should be in there.  maybe not?  never used it myself.
