I just overshot my volume by a gallon on the English Barleywine I'm brewing (seems flaked maize doesn't hold onto as much water in the mash tun as barley does ) So the planned 3-hour boil will now be 4 hours. Good thing I got nothin' else to do today.

It'll probably be even better.

And it's a gorgeous day, so no worries.

I keep wanting to brew something like this. I am afraid though that for all my efforts it would take me 15 yrs. to drink it. Or maybe that's the point.

I just started my mash. Trying to keep better notes and brew right (still shooting for no stress brewing though jtirado!)

Brewing in garage with the garage door open. Sunny out, watching some birds work on a nest.

Hope your extended brew goes well!

Yeah, this'll be one of the rare batches I'll bottle 100%. Probably bulk age for a year and then bottle (might add some Brett C.)

Relying on the Brett to carbonate?

Miscalculation on the opposite end for me. I ended up being close 3/4 gallon short in my fermenter. Oh well, it will make beer.

Dunno. Never used it before. I have some time to figure it out.

if your gravity is also high you can at that point add some boiled and cooled water to get you back to your target.

Low gravity brew. Gonna ride that train for two more months
