This was given to me from a website, modified slightly to fit our needs
1 tbsp veg oil
1 13oz package of Andoulle Sausage (or other sausage)
2 cup chicken stock
1/2 cup heavy cream
2 cups ziti pasta - cooked (i've substituted with macaroni pasta too, whatever you have on hand)
1 can Rotel
Old Bay seasoning
Salt & Pepper
Spicy Paprika
1lb Shrimp (deveined, shelled, cleaned)
1 can of corn (I used the small can of "mexican blend" corn)
Parsley flakes (for garnish, i don't do this)
Add oil to large sauté pan. Once heated, add sausage and cook for 5 minutes. Pour in chicken stock, cream and Rotel. Stir together. Season with Old Bay, Spicy Paprika, salt and pepper (i use a ton of spices and no salt). Add in pasta and bring to a boil. Cover and reduce heat to medium. Let simmer for 15 minutes.
Season shrimp with pepper and Old Bay & Paprika. Add in shrimp and corn to pasta mixture. Cover and let cook for 3-4 minutes or until shrimp turns pink.
Very easy dish with lots of flavor. This has become a family favorite this winter.
