Basic Spaetzle

4 eggs
2 cups of all purpose flour
1 tsp kosher salt
2 tablespoons of milk

Bring 8 quarts of salted water to a boil...
Beat eggs till frothy, then add eggs, milk, and salt to a large mixing bowl. Mix till blended thoroughly, it will have the consistency of pancake batter(or a little bit thicker)

Once water has come to a boil, place a colindar over the top of the boiling water. Then use a rubber spatula to force batter thru the holes at the bottom of the colindar, andinto the water.. When noodles rise to the top remove, place in a bowl..

You can add pepper, butter, nutmeg, or seasoning of your choice.. Enjoy...

Its soo damn simple, and my kid has decided he would rather eat Spaetzle than eat Kraft Mac n cheese. He use to love KMC until I made Spaetzle.... Now I'll make a big batch on Mondays. He doesn't like school lunch, and doesn't want to brown bag, so he can heat some up when he gets home. This will be eaten within 3 days...
