Haven't brewed in months. Trying out a new to me CZ malt, Prostějov. Using MJ M84 yeast

I would drink a lot of this. Nice looking build.

Thank you sir. It's supposed to be a fairly malty/resiny pils reminiscent of what a CZ APA would be. Ended up being 7 gals at 1.058 85% efficiency so it will be plenty malty. Wort is burnished gold/light copper and tasty.

 

I changed the late Saaz to all whirlpool. 3oz at 170F, 2 ozs at 150F for 20mins each rest.

Looks nice.  I still have 2 packs of M84 I should use one of these days.  I need to order some more Saaz and just do up a Czech Pils.

Can't go wrong with a bunch of Saaz in anything. My favorite hop. Leaf please.

MJ is a slow starter and an even slower floccer but it gives me what I want so I tolerate its bullshit. I make a starter (drauflassen) to get it going then gel it when I rack to the keg.

 

It has a nice profile I like in CZ beers, slight esters, not too clean. Like a lager version of English ale yeast.

Per MJ M84's cranky assed MO, I had to wait an extra day to pitch my batch as the 1 gal drauflassen starter didn't even take off for 30hrs even on the stirplate. It's just now ramping up after pitching on the 19th sitting at 56F. I'm not too surprised and hope the stress gives this beer some pleasant character as it has in the past.

My best beer with it wouldn't start at all with 2 packs pitched at 55F(pre-drauflassen days). Waited 3 days then raised the temp to 65F then dropped it down when it took off. It's cantankerous fo sho.
