One of the vault strains from White Labs, WLP 611, three vials just arrived.  One is going to be used for a hard cider (apparently the strain was isolated from spontaneously fermented apples on an island off the Denmark coast so it seems fitting). Said to have a wide temp range.  Thinking ale, maybe one that gets some brett after primary.  Any other ideas gratefully accepted.

I think a simple mildly hopped pale session beer would be ideal to get familiar with it's characteristics.

Check the Lars Garshol section of Homebrew All Stars.  That's the yeast he talks about.
