For tropical, I'd consider some Mandarina hops, or possibly Lemon Drop or Huell Melon.

 

I agree those would be nice. I'm trying to use what's on hand.

I pretty much strictly use CMC Pale Malt. Been using it since the days of $17 per bag. Yes, that right, per bag! 

 

just to make sure so please don't take offense...

 

there is CMC "pale" and there is CMC "pale ale".  at some point I didn't realize there was a difference until I looked into it.  the "pale ale" is a little richer and has a slightly higher lovibond value.

 

or maybe you are saying you use "pale" and aren't interested in using a different base malt?  I could be misunderstanding you.

 

but either way just sharing some thoughts.

Agree. There is CMC 2-row and CMC Pale Ale Malt.

So I have 1 grapefruit and 2 oranges that I peeled and have it in a 1-1/4 cup of vodka for a tincture. I did a 10g batch. Planning on adding the tincture to the kegs. Think this is enough for 10g to complement the Azacca and Citra?

I'd say it should be enough. 

 

On the chance it's not enough, you could make some more tincture and add to the keg directly.

McCormick Orange extract is very good as well really solid flavor

The vodka tincture worked out perfectly. I had total control of the blend to the point where it was easy to add a layer of flavors to complement the hops vs so many of these styles of beer that are so one-sided towards the fruit. I had a qt of tincture for 9ish gallons with some left over for another 5g batch.

Can you elaborate on your method such as did you use the peels or just the fruit? Did you cut it up? When you added it, did you just use the vodka or also the pieces of fruit?

I took one large grapefruit and four oranges (fresh) and used a potato peeler making sure not to peel into the pith. I added this to around 500ml of vodka and let sit for 3-4 weeks. Since I was doing 10g I did this in two separate quart jars. I strained the peels through cheesecloth to remove any bits. I did have a little tincture left over because I prefered a balanced blend of fruit. I added the tincture to keg after pulling a 12oz pint and played with amounts. Obviously starting with smaller amounts of tincture and working up. Then did a little math for the 5g batch.
