Kettle and chiller are clean. RO water is drawn and everything is laid out for tomorrow morning. I hope to be heating water by 9:30 and cleaned up by 11:00. Using the big kettle means in doing a full boil, too.

Biggest problem I've got now is that I've replumbed my garage sink so now I'll have to chill with softened water tomorrow, which is a waste.

I can already tell that I'm going to need to rethink my system so it's much more space efficient. I no longer need the ability to do a HERMS mash to make good beer, and if some of what I'm reading is right, I might not even need a mash tun at all.

Are you doing the 15 minute boil?

I would just look at keeping the keg and going BIAB if you have an easy way to rig up the pulley. I still use my RIMS each batch but only because I am used to it. I have gone from a 3 vessel with a RIMS to a 1 with a RIMS 90% of the time with no regrets.

Are you going to do 2 additions of extract?  1/2 at the start and half at 15 minutes?  Before I stopped extract brewing that had become my go to method.

are you using carragenan?

Chilling now. Started later than intended. I forgot about carageenan - Hell I've got Whirfloc tabs but forgot about the whole concept of kettle fining.

I added all the extract at once, and ended up needing to boil 1/2 an hour before adding the hops because gravity was too low. I forgot to account for the volume increase from the extract itself and had over 7 gallons from my original 6 gallon of water.

Whatever, I'm sure it will be beer.

It's 24 now and it's bubbling a bit. Maybe I was just mis remembering, but I was expecting a gadget start from US-05 at 65F.

I like to cold crash in the primary for a day or two then rack to a cold purged keg.

Guess I could give it some gelatin, too.  Or does that go in the serving keg?  I've forgotten so much!  :crybaby:

lol, either way will work, I like to do the gel in the keg, so I only transfer once.

This reminds me I have to get my CO2 filled, dammit!

I'll see if it's done fermenting tonight and turn down the temp if so.  Then I've got to clean kegs and rebuild the whole serving setup.  I know I've got CO2 but no hoses are connected and that includes serving hose.
