This year I made a couple of nice changes to my process based on things mentioned on the board. This has resulted in some nice streamlining of things and has made my actual "brew session" much more chill. I completely skip any secondary which used to be something I did often just to get the beer to clear. The only time I use one now is if I go on a brewing binge and don't have keg space when I need it... very rarely. I go from primary to keg, chill it, gel it and carb it. I have also done this "quick lager" method where the beer is fermented cool for the first 4-5 days and then the beer is taken from the cool spot and placed on the basement floor and the whole time it's in primary is about 2 weeks. Then it gets sent to a keg. The biggest change is the 30 minute boil which has now been done on at least 10-12 beers and I see no downside whatsoever (thanks Drez!). That change has prompted me to take the previous beer out of primary, get it into and keg and harvest the yeast prior to my brew session because the 30m boil doesn't really allow much time for anything else. So I may keg a beer on a Thursday and save the yeast and then brew over the weekend with nothing else to focus on but making beer. It's been a very nice transition and I'm getting into a nice groove with it. I kegged two beers yesterday and made a German Lager and it was very smooth. Cheers Beerheads.

I'm planning on switching over to 30 min boils as well. I used to do it once in a while when I was short on time, but now I really see no reason not to do it.

 

And honestly, I only ever secondaried my first batch. after that I said screw it! I'm not into super clear beer like some people... :rolleyes:

 

And I've only ever done one lager, so I'll have to wait on that one. I'm really looking forward to poping out some cream ales using some different hop varieties just to get a grip on what's new.

 

Glad to see things are going well at the ol' Mayfair!

Nice changes Ken! Today's NE IPA was hopped from 15 mins-0 no 60 mins addition. Tastes pretty hoppy too. Sounds like a 30 min boil works well.

14g at 30 of bravo
28g at 5 of Columbus
28g at zero of both Citra and galaxy
140g in the whirlpool of galaxy
40g in the whirlpool of Citra

Big dryhop equal to the whirlpool to come!

No idea, I have experimented with no boil for hoppy beers too.

Looks good Drez!! I used Columbus/Cascade
15 Col/Cas .75oz each
10 Col/Cas .75oz each
5 Col/Cas .75oz each
0 Col/Cas .75oz each

Adding 2oz El Dorado on day 2 of fermentation then a 7 day dry hop
