darlstar burner 6.5 gallon pot/ 25ft immersion chiller/ 

 

 

picked up a mashtun for 40 bucks with fittings (worth 60 bucks) 

 

 

5 carboys

One of the new things - the diastatic power of current grains will pretty much burn through anything. That one passed me by until Denny nicely pointed it out.   It's nice to hit temps but even if you miss by a bit/bunch lots of stuff will get converted.  I think the grainbill has become more important now

I would say grain bill and yeast choice.

1.050 for the Saison... a bit smaller than I wanted but HOORAY! I used  Wyeast 3711, woke up this morning and that ferment is going at it  HARD.
