The Nugget hops suggestion was a joke, don't worry! We'll talk about hops later, this is only for nailing down the grains. Sorry about the confusion. :shock:

all nugget hops eh?? Curses, I just finished the nugget hops from my plant last year... I won't buy any either because I will have at least that much or more this summer. I had 2 five gallon pails worth that I went through!

We haven't actually decided on hops yet. It was just a suggested based upon the chicken McNugget incident over at the "other" board.

What yeast are we planning on using? What yeast are we planning on using? I have S-04, and Nottingham on hand, as well as 2450 and s-05.

We haven't decided on a yeast yet.

I voted 30%, 1.060 and very little. But after thinking about it more, I'd be willing to bump up the wheat a bit :shock:

I've been thinking about that carmel wheat. Is it sweet like a comparable crystal barley malt? I think it would be neat to keep the specialties wheat as well...

Caramel wheat is sweet, similar to barley caramel/crystal malts. The color looks very dark, but it actually doesn't add as much color as you might think.

I think that even 25% wheat is a lot, that was the lowest so thats what I picked... 1.055 since it does have so much wheat (jmo), and very little specialty... like some of the suggestions that have been posted though. :rolf:

I voted for 35% wheat, 1.055 OG and load up the specialty grains. I would be fine with higher OG too. My favorite commercial beer of late has been Stone's Cali-Belgique. They just released it again and I snapped some up. I think using a Belgian strain for this could be interesting, or secondary fermentation with Brett perhaps. Just thinking out loud - I am all for basic APA too but it might be fun to get a little funky.

Decision: 1.055-1.060, 35% wheatLooking at the voting, I think we'll go with a higher wheat % (50%) for the session-version, and a lower % for the Barleywine version (20%). That way each peak number gets something on the %, but the weighted average gets the win on the middle-of-the-road main version.
