I'll be doing a 2L "shaken not stirred" starter for this one.  I'll make the starter tonight and brew tomorrow.

I have done a number of those now (1L) and they work quite well as expected. It's a good technique to use if you know your going to have time to brew and but didn't know far enough ahead of time to ferment out, crash, and decant your starter.

I assume you are doing 5 gal batches?  I do the 2L b/c it's 10 gal.

Right. I am fermenting 5.5 gallons with the 1L starter.

I think this is the lowest OG beer I've made in a long time.  maybe ever!  usually i can't fit all of the milled grain in one 5 gal bucket.

I doubt it will present itself this way later but the galaxy hops smell a lot like the cascades I grow in my backyard.  weird!  they were super sticky as well.

what is the suggested temp I should set my temp controller to for 002?  I have the probe stuck the outside of the fermentor.

I would start at 62 then after about a 24-36 hours go to 64 for another 24 then start it up 2 degrees until you hit 70 after that.  With the low OG I do not expect that to take long to ferment out and the 002 will drop like a rock.

I start 002 around 63-64F and that gets it as clean as I want it.
What drez said. It will make diacetyl so a nice warm up to 70 will clean it up easily.

fermentation was going this morning but slowly so I upped the controller to 17.5C (63.5F).

I'm glad you guys warned me about this yeast.  it's already slowing down so I'm going to get it up close to 70F by the end of the day.  I'm headed toward 67.5F right now.  I'll slowly raise the temp throughout the day.

One of those starters will quickly dispatch a low gravity wort.

it's actually still fermenting pretty good.  the airlock had just evaporated most of the liquid so that's why I wasn't seeing much activity.  currently set to about 67F.  unfortunately there are lots of delicious hop smells in my ferm chamber which means they might not make it into the beer :(

That yeast is pretty distinctive, but I wouldn't worry. It will taste like Fullers made a bitter with Galaxy at worst.
