Best rub ever. This is from my (late) friend Big Will. He had numerous awards and I recall him being invited to compete at the Jack Daniels BBQ Invitational in 2009.3/4 cup white sugar3/4 cup brown sugar1/3 cup black pepper1/4 cup paprika1 Tbsp garlic powder1 Tbsp onion powder1 Tbsp chili powder (Pedro Lopez if ya got it)1 Tbsp celery salt1 Tbsp hickory salt or kosher salt1 tsp ground cumin1 tsp ground coriander1/4 tsp cayenneHoist one for Big Will! the celery salt is an interesting addition that I've never seen in a bbq rub.

To make hickory salt I heat up 1 cup of kosher salt in a cast iron skillet until hot.I add a 1/4 t spoon of liquid smoke to hot salt.keep adding more LS till all of the salt gets coated.store in a air tight container

Have to agree with this.  I have been using this a lot.  Worked real well on ribs and a pork butt

Whoa, I worked with Big Will at Brewster Place the last few years he was around. Such a very cool guy and I use his rub all the time. Pretty interesting someone else here knows him. :)

I normally use the BRITU rub (from here) but I'm going to try this on the shoulder I'm putting on the smoker tonight. I'll let you know how it turns out.

 

The primary differences are the addition of the coriander, the celery seed and the cayenne powder. Everything else is the same except for the amounts of each. I'll probably dry off the sugar in the oven like the original BRITU recipe recommends, though.

This turned out really good. I took about 6 pounds of pulled pork to work this morning and by about 10:00 it was almost completely gone.

 

I tasted the rub itself before applying it to the shoulder. It certainly has a spicier kick than the BRITU rub does, but it also doesn't taste as salty, either.

 

This may become the new favorite.

Just whipped up a half batch of this. Hopefully I'll get a chance to throw some spare ribs on the grill tomorrow. The rub itself tastes good but holy crap, that's a lot of sugar! Depending on how the it comes out I may mix all of the spices in a jar, then mix a bit with a little sugar as needed,.

I made some spares a few weeks ago with this rub. Sweet for sure, was great with the ribs. I wouldn't put it on any beef though.
