I got a few bottles of Russian River's Row 2 Hill 56 all Simcoe pale ale on the way so I figure this weekend will be a good time to get my own going. Plan to mash this one at 152* and ferment with S-05 just for BlKtRe :) Simcoe Pale 10-A American Pale Ale Size: 6.0 gal Efficiency: 70% Attenuation: 75.0% Calories: 183.24 kcal per 12.0 fl oz Original Gravity: 1.055 (1.045 - 1.060) Terminal Gravity: 1.014 (1.010 - 1.015) Color: 6.15 (5.0 - 14.0) Alcohol: 5.41% (4.5% - 6.0%) Bitterness: 44.5 (30.0 - 45.0) Ingredients: 9.5 lb (72.2%) Pilsen Malt - added during mash 3.0 lb (22.8%) Maris Otter Pale Ale Malt - added during mash 300.0 g (5.0%) Caramel Malt 20L - added during mash 9.0 g (6.8%) Simcoe® (12.2%) - added during boil, boiled 90 m 22 g (16.5%) Simcoe® (12.2%) - added during boil, boiled 15 m 34 g (25.6%) Simcoe® (12.2%) - added during boil, boiled 10 m 34 g (25.6%) Simcoe® (12.2%) - added during boil, boiled 0 m 34 g (25.6%) Simcoe® (12.2%) - added dry to secondary fermenter

sounds excellent. why the combo of pils and maris otter? why not just use 2-row pale?

Good qestion and I do not have a good answer other than I have a lot of pils and want to give it a try. I am also hoping that the pils may give it a bit of a "lighter" feeling to the beer. I really want a light colored, light feelign beer with a ton of hops. Only a few weeks will tell if I can accomplish that.

What a way to ruin some good hops with that 05 :devil: J/K! I dont see a reason not to blend the Pils and MO if you are short. It will add some malt to the pallet without being overly sweet :) vs a lighter bodied version of just Pils. I think this will accomplish what you are looking for in the grist. I can taste this beer from here!

Sounds awesome! How about adding a FWH too? I've been putting them in as my bittering charge and calculating them as basically a 25 minute addition. seems to really sustain the flavor.

Busted this one out yesterday. OG came in at 1.053 because I turned the boil down a bit towards the end, Pre-boil graavity and volume were spot on. I tried using a post-wort chiller that BlKtRe has talked about before. Worked great, and in the end did not really increase clean up time much at all. Now have to site back and wait.

Threw in 1oz of Simcoe to the carboy on Sunday. Gravity was down to 1.009 and the sample tasted good. Hitting it with another ounce today and plan to keg it up Sunday.

Hmm .. I thought it may need moar!! :)

I will post back after it is all carbonated up to see if it was enough or not.

Just to close this one out, I will be brewing this beer again. Really happy with how this came out. Light and dry with huge hope flavor and aroma without being overly bitter. I have a feeling this keg will kick any day. I do not plan to change anything with the recipe

Just to close this one out, I will be brewing this beer again. Really happy with how this came out. Light and dry with huge hope flavor and aroma without being overly bitter. I have a feeling this keg will kick any day. I do not plan to change anything with the recipe

I've been making a lot of beer lately! Drez has been pimping this one for a while now so I decided to finally try it. The beer is 11 days old today and is tasting fantastic. Admittedly my recipe has some minor changes but is close to the one above. My hop schedule reflects my SOP and I went with Columbus @60 and added 90g Simcoe in the 165F hop stand and 45 dry in a single addition. Also there is a slight discrepancy in the Pils:MO ratio but that's minor. IBU and OG are as prescribed and US-05 was used. The only thing that could have turned this beer around faster would be a healthy pitch of 001/1056 instead of the US-05 but the US-05 sure made a nice beer here.

 

The Pils/MO base is nice, very nice. There is just a touch of that MO richness and light caramel in the background and otherwise it's a nice light, dry, pale ale with great hop character. No cat pee in this batch of Simcoe. It's bright, lightly piney, and fruity with a touch of grapefruit. It's Simcoe. Much of this will beer will be given away over the next week or two and I'll be happy to do so. As others have done, I plan to make this base beer again varying the hop varieties and combining some to learn more about different hops and hop combos.

 

If any of you guys have been thinking about making this I say go for it. Great recipe Drez.

That beer looks great nettles. Glad you tried and liked the recipe. I use that grain base for a lot of beers these days. Heck, the one dry hopping now used it.

Plan to brew this beer again this week with some minor changes.  Going to only use a 30 minute boil and the hopping will be updated to a bit to include a whirlpool like I typically use with hoppy beers these days.  I will post the updated recipe and results in this thread.

I can see a 30 min boil working well for a beer like this, may need to try that as well soon.

I would repost it. It's a really nice beer and we went through it very fast. Would you bitter with Simcoe at 30 min.?

FWH with Simcoe

then additions at 5, 0 (10 minute steep), 20 minute steel at 170 and then dry hop
