help me make something tumbler-esque

Studs, How did this one come out?

 

it came out good.  too much chocolate to be like tumbler but good.  the smoke level was maybe slightly above tumbler as well but not by a lot.

Yes, I agree it was a nice beer.  It was an up-scaled version of Tumbler for sure but I liked it better than Tumbler. It was a nice middle ground between mine and Tumbler.

if i made my recipe again I would probably back off the chocolate just a little bit (although not enough to make it like tumbler) and then either mash higher or add slightly more crystal or some combination of the two to kick up the body a little bit.  flaked barley, wheat or oats might work as well.  but again it depends what you are going for - if you like your browns a little drier my recipe is at a nice spot for that.

I'm thinking of iterating on this for my next beer (after the saison of course).  anyone made anything similar lately?

I do my version twice a year. The next time will be in February. I got it pretty nailed down for my tastes.

I know you will not be able to see the picture so the grain and hop bill are the same.  I mashed at 150 with S-05 and my water was Ca - 85, So4 and Cl - 86.  At this point, I do not see changing this beer.

 

Please ignore the typo of "Alt" it should be Ale

so looking at my comment at the top of this page perhaps I want to back off the chocolate slightly.  I may actually get rid of the pale and just keep the regular chocolate.

 

what do you guys think pale chocolate is like?  I feel like maybe it makes things taste a little "nutty" when combined with crystal malt.  is that right?  maybe that's something I'd want in a brown ale.  I'm not really sure.  this would be a little easier to iterate on if I had the beer from the last time I made it to try.  I'm hoping I have some notes at home that might guide me on v2 of this.

Clone CBC Smoke in the Valley instead. Or just make a basic brown with 10-20% of the grist cherrywood smoked malt from breiss fermented with wlp007

the tumbler was the inspiration but the result was more complex than tumbler.
