thai pesto (for marinades)

for all of those that recall my love of the traditional pesto (garlic, basil, pine nuts, olive oil, salt/pepper), this is for you!  :)

 

I've used this on chicken and then used the sweet/spicy garlic sauce (also posted in the recipe forum) when consuming.  it's a winner for sure if you like garlic.

 

this is good for probably 3 lbs of meat:

 

2 tablespoons chopped garlic

2 tablespoons chopped fresh cilantro

2 tablespoons soy sauce

1 tablespoon curry powder (make your own or just pick some up at the indian/paki market)

1 teaspoon vegetable oil (I use canola)

1 teaspoon salt

1 teaspoon black pepper (freshly ground preferred)

 

throw all of this stuff into the food processor and let it have it.  spread the delicious paste over whatever meat/seafood you would like.  i can imagine shrimp might be nice.  marinate for however long you see fit.  i'd think 30 minutes would be the absolute minimum but i like to do overnight for this sort of thing.

 

then grill away and enjoy!  :cheers:

Try adding lemongrass.

would probably be good but the soy sauce doesn't seem like it would fit.

Lemongrass and soy sauce are great together

I keep forgetting to add lemongrass - maybe next time!

 

so anyway one thing I've found is that it's better to just chop the garlic and cilantro into small peices instead of getting out the food processor.  you still get some solid garlic flavor but you also don't still taste garlic in your mouth the next morning.  plus you don't have to wash the food processor.

I go the other way when I make these sorts of marinates- either use a mortar and pestle to turn the garlic and cilantro into a paste, or a microplane grater to turn the garlic into liquid. More garlic!

You may want to reduce the amount of garlic then :lol:

Try subbing Thai basil for the cilantro.
