How long do y'all wait after adding Campden tablets before pitching yeast into fresh-pressed cider?

At what rate? Usually 12-24 hours.

1 tablet/gallon. I been told everything from 30 minutes to 48 hours.

I don't use, but pitch my yeast (typically Cotes de Blanc) with no issues.

I've heard anywhere from 24 to 48 hours.  I've pitched yeast at 24 hours and it turns out fine.  Although personally, I have had much better success with my ciders when I heat pasteurize at 170 F for 15 minutes.  So I'm not using Campden this year.  YMMV

If you make a decent sized starter, do you really need to sulfite?

Some will disagree, but I'd rather kill what's there and then use my favorite yeast than leave things up to chance.
