Just ordered 60 pounds of wildflower honey.

Grabbed some SuperStart Distiller's Yeast as well. Can only buy it by the pound, so I'm willing to share.

 

On the To Do List is Fall's Bounty Cyser, Guest's Cherry Mead and Cruz's Apple Butter Cyser. Then I'll thrown something extra together with what is left over.  Definitely gonna need more carboys.

  :goodidea: Don't ferment it too low though. That stuff is supposed to be desert in a glass....or an iron fist in a velvet glove.....or an 800 lb. gorilla with a chainsaw penis....or something like that.

I think that is the next sequel in the Saw series. :crazy:

 

From all the threads I've studied, this was Hightest's suggestion. Assuming I reduce the cider to 4 gallons and actually achieve the 1.170 do you think I'll have a problem with it being too dry? The distiller's yeast ferments up to 22% with the SNA.

That's a final gravity of about 1.023. That's pretty sweet but not super sweet.

I can always sulfite and add honey at the end.

I've never used distillers yeast.  Could it chew thru everything and leave no profile?  With SNA, could D47 be a better choice?  Cotes de Blanc?

D47 is about 14% nominally, maybe another point with SNA.

Those yeast were mentioned and they just didn't attenuate enough to keep it from being very syrupy. If Hightest recommends something, I'm pretty inclined to go with his advice. Cruz originally used Red Star Distiller's yeast but you can only get them in 50lbs bags.

 

 

I honestly believe the distiller's yeast is the proper choice. Cruz stated his best batch used Red Star distiller's yeast. That was my first choice until I found that it is only sold in 50Lb bags. I could find no HBS that either had that yeast, or would get 50lbs just for our group brew (That I understand). And so I found Superstart distiller's yeast. I has similar specs to Red Star, and it is available in 1 lb packages.

I would be interested in hearing how this comes out.  I have never heard of distiller's yeast making good product on its own.  I could see taking a wine yeast to it's max and then finishing that sucker with it.  If Hightest says it works, I trust him though.  It is funny how many distillers eschew the yeast as well even for their products because of the off flavors it can throw.

Yea, it was cheaper than the local apiary and no one had wildflower honey.

Just curious.  Dutch Gold is not far from you ( Lancaster, Pa.), they usually have the best prices on 5 gallon buckets.

Never heard of them, but I'll definitely look into them now.

 

Looks like they are about 2 hours from me.
