I have a chance to brew this weekend and this is what's basically on hand 9 lbs "Kolsch" Pilsner (2 Row) Ger (2.0 SRM) Grain 1 82.8 % 1 lbs 6.0 oz Munich Malt - 10L (10.0 SRM) Grain 2 12.6 % 6.5 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 3 3.7 % 1.5 oz Chocolate Malt (350.0 SRM) Grain 4 0.9 % 1.50 oz Hallertauer [4.80 %] - Boil 60.0 min Hop 5 27.5 IBUs 1.50 oz Saaz [4.00 %] - Boil 10.0 min Hop 6 8.3 IBUs US 05 Est Original Gravity: 1.052 SG Estimated Alcohol by Vol: 5.1 % Bitterness: 35.8 IBUs Est Color: 11.9 SRM How's it look?

In a pinch, would US 05 work for an Alt?

how cold can you ferment it?  I think 05 near 60 would be ok.

I think I might use a lighter Crystal, perhaps 60 or 80 and up the IBU from the main bittering charge to give you about 40 in the end, and keep that US-05 as cool as you can.

Thanks. My thoughts loosely based on style guide barely gets me into the color range as written. I do have 40 on hand however. So you'd say use 40 and the chocolate
