Theres a good article about the minor differences of CM and Crystal written by the Mad Fermentist. For me there is the flavor difference with using Franco Belgo malts vs Crystals from other maltsters.

Yes. Style dependent of course but I only brew a handful of styles.

Yea, I already have. Pretty much all I want to brew is Sours, IpA, Gr. Pils, and Porter. With those requirements I can keep the CM's around and some darker stuff. Other lighter beers the CM's work fine.

I figure I can get away with Carastan, Medium Brit Crystal, CM 70L and some Spec B.

We still have a commercial account with MCM so I always go for the FB stuff. It tastes different/better to me that other maltsters. I rarely brew anything that requires flavors from Spe. B. I have plenty of other malts for color adjustment. Sounds like you have what works for you too.

Yes, that was my problem with my Summertime Speed. I misjudged and didnt have any 20l.
