Tell me about Motueka if you don't mind. I have 4oz. of it in the freezer. Wasn't it you that liked Motueka in a saison as well?

Love Motueka. Yes I use them in Saison. I've used it successfully in Pilsners and other Belgians too. I'm basically using it in this Blonde like I would in my Pilsner. It has an interesting tropical note to it.

Do you think they will pair well with Nelson?  I am planning a Saison for next week split between 2 yeast blends.  I was going to go 100% nelson or 50/50 Nelson and Galaxy but looking for other options.

Drezz, back in December I made a Saison affectionately referred to as Saison Suavin - what a nice flavor.  I'll have to check my notes but I am pretty sure I started with an ounce of Hallertau at the beginning and hit the pot with a half ounce of NS at 20, another at 10 and half at flame out.  WLP550 too.  I have to say it was very pleasing but seemed to mellow even more with time.  NS is flavor packed.   IMHO it can also be overdone.

Oh, just wondering if you were going to use that Wallonian?  Been keeping my eye on that one for an upcoming batch.

Good to know.  I was thinking of 10G and bittering to about 30 IBU at 60 with something then 2oz of Nelson at 0 2oz when the temp drop to 180 and then dryhop with 4oz, this will be a 10g batch.

They would probably play together but I agree with Stepp that the NS could easily walk on the Motueka. For me I think Motueka deserves to be the star in a beer. You have used the NZ's before so using a lighter hand is key.
