No brewing here but I bottled 3 g's of Apple Guava Cider and 5 g's of a Belgian Imperial Cream Ale. My work is done. Next Saturday; a sessionable bitter.Cheers Fellas

Tell me about the Imperial Cream.  It is a concept I have had for a few years just have never done.  What is your interpretation?

Well, a couple months ago I set out to make a cream ale and wouldn't ya know I blew away my efficiency and ended up with a nice malty 7.5% ICA.  It was a real crowd pleaser; family and friends. I had a nice amount of slurry of WLP530 Abbey Ale and with very little modifications to the original recipe I set out to make what I'm calling a Belgian Imperial Cream Ale....  I bottled it yesterday unfiltered and can't wait to try this batch.  It came in at 7.3% and has a great taste uncarbonated; semi sweet, fruity and silky.  The original batch was crystal clear.  This batch will likely stay cloudy due to no secondary and bottling.  Here's the recipe if you're interested.

 

10 lbs German Pils

1 lbs Vienna

6 ounces each; flaked maize and barley

1 lbs corn sugar at 15 min

1 oz Northern Brewer 8.5% @ 45 min

1/2 oz each; Saaz and Stryian Goldings @ 20 min

1/2 oz each; Saaz and Stryian Goldings @ 5 min

Abbey Ale Yeast WLP 530 slurry

 

1 hour mash at 148, 70 min boil

 

I fermented it a little high ~ 75-78 degrees as an experiment to pull out as much yeast flavor as possible

I'm gonna be brewing on Thursday. Not sure what I"ll do yet.

 

I was thinking either a Cherrywood Smoked bitter or a light session IPA.

 

I had Anderson Valley's 128 and thought it was awesome. I never liked Columbus that much in my own brews, but they hit it out of the park with that one!
