So I was planning an APA for quick turn around as a the first brew in my new house but since I found yesterday that I couldn't find some of my equipment (Dial Thermo for my brew kettle, small scale I use for hops) I felt I was shooting from the hip so I came up with a grain bill as I was getting ready to crush the grain.  The hops were decided as I was mashing in. 

 

12 # 2 row

1 # C60

4 oz British Chocolate Malt

2 oz Black Malt

 

1 oz Centennial 10%AA @ 60 min

1 oz Centennial 10%AA @ 15 min

1 oz Centennial 10%AA @ 5 min

1 oz Simcoe 13%AA @ 5 min

.5 oz Columbus 14.6%AA @ 5 min

1 oz Centennial 10%AA @ Flame out steep for 15 min

1 oz Simcoe 13%AA @ Flame out steep for 15 min

1 oz Columbus 14.6%AA @ Flame out steep for 15 min

 

I hit an OG of 1.063, IBU's around 69.  I was measuring the hops with my grain scale so that's REAL accurate by the oz!! 

 

Mashed at 152-3

 

Pitched a packet of Nottingham yeast at 60dF.

 

It was a really nice garnet color and smelled amazing.

 

I may dry hop this guy, but haven't decided yet.

That is one fine looking recipe.  May I ask how much roast will come through?  I ask b/c I'm building an ESB for this weekend and I want a little dark color and right now have a couple oz's of chocolate in the build up.  I do not want overly roasty.

My experience in the past I have been able to get away with 2 oz of Black malt without any flavor contribution.  I'm guessing I will get some from the 4 oz of chocolate malt but it shouldn't be roasty.

I figured you'd be a fan of this one.  Real suprise on the hop selection from he huh?  I just love those 3 together.

I'm on the fence over dry hopping this one.  IF I keg this one I may just keg hop it. 

 

The one thing I'd have changed if I could have was the yeast but I think it will be just fine.  This would have been a 1450 / 1272 beer I think had I had the option at the time.

I do not think I will be DH'ing this one.  Instead I will use 1 oz of Simoce, Cents and Columbus in teh hop rocket on teh way to chilling.  So I would whirlpool and hop back.  1272 sounds like a winner to me.  1450 and I do not get along very well :)

I did the flame out addition because I used the garden hose w/53dF ground water through the IC.  Wow did that thing knock down the temp to 100 FAST.  I killed the flame, dropped in the chiller, then the flame out hops.  After 15 min I turned on the water.  I'm sure this guy will be hoppy enough w/o the dry hops but I'll make sure I test it before I make the final call.

 

1272 has never treatked me bad.

It's a lot like Tasty McDole's Janet's Brown Ale recipe. Should be good!

Holy crap this yeast is a beast!  It took it down to 1.010.  I guess next time I use Nottingham I'll mash this around 155-156.  Well, I transferred it to keg and its getting cold.  I'll start carbing this up tonight and hopefully it'll be ready by Sunday.  I've got a guy that use to extract brew back 5 years or so but when he found out I brew all grain he wanted to "lesson" read "can I come over while you brew and drink some homebrew"  - I'm new to the area so I could use a brewing buddy so I obliged.

Can not wait to hear how this tastes.  I would like the FG a bit higher than 1.010 but I never would think notti would take it down that low.

Hop-licious.  Slightly toasty, big hop nose and a big resiny aftertaste.  It came in around 7% so gotta be careful on this one.  Big tan head with a mohagany hue.  I'd say we are in the Brown IPA range with this one.  Wish it had finished a bit higher, for more body but still a good brew.

Looks like good changes.  I might even consider adding some flaked barley or toasted flaked oats.  I think S-04, 1968, or 1272 would all be good here.

That sounds really nice. I forget, was this with your questionable well water or did you use RO/distilled for this?

 

I did a 60/40 - RO/Well split on the water.  I'm going to do a 50/50 split on the water on a pale ale this weekend.  I think the water is workable.  I'll be sending in a sample soon enough but I need to get some beer in the lines here.

Both of those thoughts crossed my mind but I want to brew it as you had planned for the first time.
