Got this from the latest penzeys spice catalog. This counts as a vegetable, right?1/2 Cup margarine or butter (1 stick), room temperature13/4 Cups sugar1/2 Cup oil2 eggs1 tsp. PURE VANILLA EXTRACT1/2 Cup buttermilk or sour milk (1/2 Cup milk plus 1 tsp. white vinegar = sour milk)21/2 Cups flour4 TB. COCOA POWDER1 tsp. baking soda1/2 tsp. PENZEYS CINNAMON1/2 tsp. salt2 Cups grated zucchini, peeled if desired, drained (about 2 medium)12 oz. semi-sweet chocolate chips1/2 Cup chopped pecans or walnutsPreheat oven to 325° (for a glass pan) or 350° (for a metal pan). In a mixing bowl, cream together the room temperature margarine/butter and sugar. Add the oil, eggs, VANILLA and buttermilk and mix well. In a small bowl, combine the flour, COCOA, baking soda, CINNAMON and salt. Gradually add to the wet ingredients and mix well. Fold in the zucchini. Pour into a greased and floured 9x13 pan. Sprinkle the chocolate chips and nuts over the top of the cake. Bake at 325° for 45-50 minutes or at 350° for 35-40 minutes. Let cool before cutting.

My MIL is a cake lady.  She has been making birthday cakes for all sorts of folks (aside from her massive nuclear and extended family) for going on 30 years.  Kind of a little side gig she has going.  She doesn't really make shit off of it, but she really gets a good feeling helping people out and sharing the love.  Anyway.... she makes her kids, sig others, etc a cake for their birthday. She refused for a couple years to make me a carrot cake though, because ¨real cakes don't have vegetables in them¨  lol!  Now she makes me a carrot and ginger cake with orange juice cream cheese frosting.  It has become a family favorite for sure.  It was the first variety of like 8 cakes at our wedding that was gone!  I am going to get her to make this!  Gonna need some frosting though!
