Chinook Black IPA

This will be my next brew. I'm still milling over the recipe.

 

13# GW NW Pale

.5# C20

6 oz Midnight Wheat (powdered and added and vorlouf)

 

1 oz Chinnok 13%AA @ 60

1 oz Chinnok 13%AA @ 15 

1 oz Chinnok 13%AA @ 10

1 oz Chinnok 13%AA @ 5

2 oz Chinnok 13%AA @ 0 (hot whirlpool 20 minutes)

2 oz Chinnok 13%AA @ DH

 

1.065 OG 70ish IBUs

S-05 ale yeast

 

I recently tried an all chinook pale ale and it was really good. I think the pine-ness of chinook will work nicely in a black ipa.

 

Thoughts? Enough dark malt/not enough?

I would go for a whole pound of Midnight Wheat if you want it black black. That's what I always do with mine.

Almost none. Slight smooth roasted flavor with no harshness that is perfect for Black IPAs. You probably won't even have to go all the way to a full pound. 10-12 oz. ought to do it.

How do you add yours? When I use debittered black malts, I powder them in the coffee grinder and add them right before recirc.

Not much to add other than my local brewery does an IPA that is almost all Chinook.  Previously i would have ran from a beer with that much Chinook but this one has changed my mind.  It is now my favorite beer they make. 

 

I agree with the change to 1# of MW.  I have a black APA that I do with 1# and it is a nice dark color and not roasty.

I LOVE Chinook hops, but I find single hop beers to be kinda boring.  IMO, another variety or 2 would help.

With my 4 hour mash, I don't want them stewing that long. I'll probably get more color with the fine grind so maybe 10 ounces will work.

I hear you. I'm tempted to toss in some Amarillo but I really want to see how it comes out with the one hop.

Just doughed in with minor grain bill modification.

 

12# GW NW Pale

1# flaked barley

.5 Briess C40 (free sample from NHC)

 

Will add 10 ounces of powdered Midnight Wheat at recirc.

Just pulled the first carbed sample of this. It has a bright resiny hop aroma but with a touch of onion that you get from some hops. Hopefully that will fade a bit. The malt bill is spot on and nicely bittered. I am missing the punch of hop flavor. I thought there would be enough hops but I guess not. Tasty beer bit more like a bapa than bipa

How black did you get it with your 10oz MW powdered and added late?

I like the beer but it could definitely use something more. I'm thinking of adding some Simcoe, Columbus and a little Centennial.

I just did an APA that was chinook and citra.  I think it is a great combination and would add that to your list.  I used 2:1 chinook/citra.

Checking my notes, I ended up using 13 ounces of powdered midnight wheat at vourlof. I think the grain bill is spot on for my taste. I'm really enjoying this beer. It might not be hoppy enough to win a contest but it's damn tasty.
