I think it's mainly because they had to change the hops as they grew. They couldn't get enough of the hops they originally used while growing so damn fast. I think they'll hit the 100k bbl mark in a year or so.

They have had some insane growth

Haven't had it in a while, but Jai Alai has changed over the years and it's not quite as good as it used to be.

Never thought much of the regular Jai Alai anyway. Too sweet. I prefer a drier IPA. The Humidor version is the one I liked.

Never thought much of the regular Jai Alai anyway. Too sweet. I prefer a drier IPA. The Humidor version is the one I liked.

 

Humidor is just jai alai on cedar chips from cigar boxes I think.

The cedar can be tannic, perhaps that is influencing his perception of dryness.  The cedar also adds a really nice quality which perhaps really tied the room together for him.

I'm aware that it is Jai Alai with Spanish Cedar. I think your post here is exactly right. The wood did something magical to the beer. I think the strong aroma was the main thing I liked. Very unique
