I currently brew exclusively with leaf hops.  I've got pretty good results with the american leaf hops I buy by the pound online.  However, when I brew Pilsners with the European hops I get from the same source, they don't have any of the noble aroma I get from some of my favorite commercial Pilsners.  I hop these Pilsners at a pretty high rate (4+ oz, mostly late additions - similar to my hoppy APA regime) and still nothing.

Is there a better source out there for good Euro leaf hops?

Do I need to increase my hop rate even more?

Or do leaf hops simply not able to handle the long trip from Europe, and I need to reconfigure my setup and use pellets?

Also, what American noble-ish hops would work best for a Pils?

Thanks,

Matt

Both - somewhat more often bohemian, though.

for Bohemian, Sterling is nice, Santiam, Mt Hood, Ultra, Crystal for German all are very "noble"

Listen to Mic, he knows his 'mercan nobles.  I can personally attest to sterling, santium and mt hood.  People can't tell the difference... especially on the sterling.  Hoods are really really close and santium are just nice. Sounds like jiberish but those hops are good.

Other than American "noble" varieties (which can be very good), my other suggestion would be to look into pellets.  I've pretty much switched to using pellets exclusively when I use continental hops.  The quality is much better than whole.

I have even been burned a few times by pellets being sub par from Europe

When it comes to whole I almost exclusively buy from Freshops.

In general, though, continental pellets will almost always be better than continental whole hops.

Dave Wills is an old friend so for years Freshops was about the only lace I bought from.  But once I discovered Hop Heaven (run by Ted Hausotter, Master BJCP and all around great guy), they became my go to.

hadn't heard of them

I prefer pellets in general for storage space and stability, but will take what I can get usually.

Do you buy from Hop Heaven on their Ebay store?

Sometimes, yeah.  But once you're a customer, Ted sends around a pre season email so you can pre order early.  If I need something else after that, I use the eBay store.  It says something about him not being around, but that's only becasue he doesn't respond instantly.

Perhaps a mod could add his ebay store to the list of the bulk hop suppliers in the FAQ?

Done but next time shoot me a PM so that I'll be sure to see it. Just happened to stumble across it this time.

I very much prefer Sterling to US Saaz and Santiam to US Tett (which is really Fuggle I believe).

Love Sterling and Santiam.  Yes the US Tett is a Fuggle.  So says Denny.

I want to say the US Saaz is a Fuggle as well IIRC.  Either way, I am not a fan.  I like Fuggles for some stuff too though, for whatever reason, I dont care for the US Saaz

IIRC US Saaz is a hybrid of Saaz and Cluster

AB Inbev grows real Saaz up in Eagle Idaho, but, that doesn't make it to the open market, at least they used to, but they also planted Sterling at one point
