My issue was that my wine fridge had a built in thermostat settable from 45F-65F, so my finished beer never got to the boiling point of acetaldehyde (68.4F) before the cold crash.
I got tired of not being able to lager in it, so I pulled the factory temp probe out of the inside of it so that it now reads room temp(keeps compressor kicked in) and control it with an STC-1000. I can now lager or heat it as necessary.
