Nice. I was just thinking about how long of a night it will be too. The Cubs are supposed to continue a "suspended" game at 4:05 local time but there was rain here so it's delayed. Then they're supposed to play at 7:05. :PJP: Good luck with the Pils.

No... It's a work in progress.  Here's what I can tell you.  I started with all RO water, I'm mashing at 149dF and I have the following water going after additions all in PPM: Ca 51 / SO4 37 / CL 64. Oh yeah all Hau. Mitt. FWH/60/15/5 additions to about 41 IBU.

Which yeast are you using?

First go with 100% RO?

Somewhere over on the greenboard is a thread about starting a brew around midnight.  Didn't have a recipe at that point either.  Finished up around 6:00 AM, brought the paper in and hit the hay.  As I recall it turned out quite well too.

And dumb as it sounds - it was fun.

Going with 2124 - and I'm going to use Chils starter method of using wort and letting the fermenter chill over night and pitch in the morning.

As for RO, yes, first time going 100%

I did a 10 or 11pm start one time. I was staying up late smoking some butts overnight anyway so I just decided to last minute. And it was fun.

Meaning? All pils? Any munich or Vienna in there? A pale beer is a delight. A crystal clear, pale gold beer is beautiful. Take pride in it JP!

Well all wrapped up and cleaned up for the most part and it's midnight.  Not too shabby. Wort is going to sit cold overnight and hopefully cool off a few more degrees = could only get it down to 52 with the chiller.  I'm going to pull the Chils method in the morning before work and rack the wort off the trub and then pitch the yeast in the clear clear clear wort.
