So I stopped at my LHBS yesterday and picked up a 50lb sack of Rahr Pale Ale malt. I'm going to make a string of very simple and very similar recipes which will feature some late hops. Some recipes will have the same late hops used near the end of the boil while others will have a blend. I have 6 separate recipes ready to go. 1. Rahr Pale Ale malt + 8 ounces of C40, bittered and flavored with Columbus and then 2 ounces German Hull Melon added late: SRM 7, IBU 40. 2. Rahr Pale Ale malt + 8 ounces of C60, bittered and flavored with Nugget and then 2 ounces of Australian Summer added late: SRM 7, IBU 38. 3. Rahr Pale Ale malt + 6 ounces of C80, bittered and flavored with German Merkur and then 2 ounces of Nelson Sauvin added late: SRM 7, IBU 48. 4. Rahr Pale Ale malt + 4 ounces of Special B, bittered with Columbus, flavored with Nugger and then 2 ounces of Amarillo added late: SRM 9, IBU 42. 5. Rahr Pale Ale malt + 5 ounces of CaraBohemian, bittered with Brewer's Gold, flavored with Nugget and an ounce of Citra and an ounce of Mosaic added late: SRM 7, IBU 48. 6. Rahr Pale Ale malt + 5 ounces C120, bittered & flavored with German Merkur and then an ounce of Amarillo and an ounce of Simcoe added late: SRM 8, IBU 44. Probably use 1056 on all batches unless I mix it up with 1272 or something. They should all be good platforms for the late hops to stand out.

Wow Ken... That looks like a brew schedule I would have, not you. Where is the Mexican lagers? LOL

My tastes keep changing and I have always liked pale ales... especially in the fall and winter but year-round really. Anytime I go into a brewpub, I look to see what they're doing with their APA and it's usually the first thing I'll order. Some of the hop combinations are surprising (I had one in Indiana that was Glacier + Crystal + Cascade, very nice). I have already made one of these that was Nugget, Mt. Hood and Amarillo and another one that was Magnum and Mosaic and one more (which I have made multiple times) with Amarillo & Citra. One of those is on tap, another is cold, carbed and kegged and the Mosaic version is in primary.
