Black Betty IPA

Ok, so Black IPA / American Dark Ale it is.... here's what i'm thinking.  Steer me if I need it:

 

OG 1.061

IBU 84

SRM 34

6 gallon batch

 

12 # 2 Row

1 # C60

14 oz Midnight Wheat

Mash at 150dF

 

1 oz Cascade 5.6%AA FWH

1 oz Columbus 14.8%AA 60min

1 oz Cascade 5.6%AA 5 min

1 oz Centennial 10%AA  5 min

1 oz Simcoe 13%AA 5 min

.5 oz Columbus 14.8%AA 5 min

1 oz Cascade 5.6%AA 175dF Whirlpool

1 oz Centennial 10%AA 175dF Whirlpool

1 oz Simcoe 13%AA 175dF Whirlpool

.5 oz Columbus 14.8%AA 175dF Whirlpool

Dry hop

2 oz Centennial

2 oz Simcoe

 

Ferment with 1272 around 65-68

 

So am I in the right ball park here?

Oh yeah. That looks great to me. Aren't those your 4 favorite hops you put together in that one?

Yup... and the only non noble varieties I have on hand right now.

Correct me if I'm wrong but at 6% Midnight wheat, it is going to contribute nothing but color right? If so, I think that's an awesome line up. Taking a drink with eyes closed, it would never taste dark right? If so, quite the quaffable ruse :)

IME that is what you will get out of it.  I did get a hint of roast right in the keg but after a couple days of settling and getting carbonated it was gone.

I like a 10 or 15 minute addition for a bit more hop flavor but I think your recipe is solid as stands. 

 

I like the midnight wheat much better than the debittered carafa. The carafa imparted a subtle but distinct flavor that I did not like. The MW is much cleaner.
