Brewing this sunday and still haven't come up with a recipe. We want to have a fall beer with a fairly quick turn around, not something that will take until December to drink. I was thinking of a brown ale with a hint of cinnamon for fall. Anyone have a go to fall recipe they would like to share? I'm struggling to come up with something on this one.

I like to think my Smokey Brown is a nice fall beer.  Should be a quick turn around beer.  You can also dial down the smoke malt if you are not a huge fan of it.

Cinnamon Brown Porter sounds good to me.

my two cents.  I like porters in the fall but do not care for spices in my beer, never had a spiced beer that I liked

browns, ambers, reds, porters.  all excellent fall beers.  but really any beer is good in the fall.  let's be serious!

It will be a light touch of spice for sure.

one of the few spices I don't mind in a beer (when you can really taste it) is vanilla.

 

orange peel and coriander are fine too but those pretty much just taste orange like.

Denny that looks really god. If I wanted a ten gallon batch would I increase everything by 20%?

I should have explained better, I really don't like the spices often found in Christmas/Winter beers (cinnamon, nutmeg, etc).  Yeah, my original post left out a lot of detail...one of my favorite styles is Wit and it certainly contains spices

Ooops.....I have a newer version....sub Columbus or Nugget for the Galena.

I keep thinking about this beer.  I might just have to make it!

 

I have some palisade I need to use up so I may sub the bittering wilamette for palisade but otherwise use wilamette.  or maybe use a wilamette/palisade blend for the 90 and 45 minute additions or something.  I also don't have C55 but I do have C40 and C65 so I might do a blend there as well.  I know I'm totally screwing up this recipe but I'm guessing I'll still be pretty close.  There is also a part of me that would like to split the batch between S-04 and US-05 as another experiment.

Skip the 40, just use 65.  If you use S04, I'll hunt you down....;)
