Clearly this is not an original idea. I had gone to a great restaurant where they made this great yellow rice with grilled garlic shrimp over the top of it. I honestly don't even know the origin of a dish like this although 'spanish' and also something along the lines of 'new orleans' comes to mind. Anyway, I have made this in various forms and all of these forms include cooking the shrimp on the grill and then combining it with a good boxed rice mix. Anyone could envision an alternative and there are probably many combinations. For this, I used 2 pounds of uncooked jumbo shrimp and 2 boxes of Zatarain's Garlic & Butter rice. I cleaned up the shrimp, cut them in half and then put them into a bag with some chopped sweet onion, garlic, smoked paprika and olive oil and let it sit in the fridge. When it was time, I poured the shrimp onto a foil pan (with some cooking spray) and placed it on the grill...Let that go until the shrimp is cooked and you get a little bit of browned edges on some of the shrimp.Then I cook up the rice according to the directions and when it's done, stir in the shrimp.I also used some Tony Chachere's Creole Rice mix a few times as well. Everyone in my family wolfs it down and it's always tough to find something everyone likes. It's comes back for leftovers just fine too. Cheers Peeps!
