What are your favorite beer/food pairings?

As the title says, what beers do you enjoy most with specific foods?  Homebrewed or store-bought, doesn't matter.

 

Years ago, I bought Garrett Oliver's "The Brewmaster's Table", and while a little bit dated now, he offers good overall advice on pairing beer with different foods.

 

That said, what are some of your favorite pairings?

 

I'll start:

 

 

Buffalo chicken wings - IPA; the drier/hoppier, the better.

 

Oven-roasted pork tenderloin - Irish red (on nitro).

 

Chocolate anything: stout (on nitro), a good robust porter (a la Edmund Fitzgerald), the raspberry blonde ale I'm brewing today.

Spicy food (mexican, thai, whatever) and lots of American hops.

Sour beers and BBQ.  The acid in the sours does a great job with the fattiness of BBQ.

Sour beers and BBQ.  The acid in the sours does a great job with the fattiness of BBQ.

 

I haven't tried this but I enjoy browns/porters/stouts with BBQ.

 

Also anything light and crisp with indian (could be a lager, could be a dry IPA).

 

I really enjoy a stout or ESB with some fish and chips.

 

I tend to enjoy "winter" beers with arugula.  something about the richness of the beer with the bitter/peppery greens.

 

german lager beer with german food is also a pretty safe bet.

belgian strong dark ale with mussels and fries

 

triples with steak and fries

 

saisons with bbq chicken and some lighter sides (salads, veggies, etc)
