What the hell I can get in on this. Have never used Brett before. So is Brett a really slow fermenter? What temps do they usually ferment at?

Yeah I was thinking just whirlpool and dry on the citra but I'll play along however with this one.

Brett 100% fermentation should not take much longer than regular brewers yeast.What the hell I can get in on this. Have never used Brett before. So is Brett a really slow fermenter? What temps do they usually ferment at?

66 is fine by me. I'm thinking a FG will be 1.012-14 so that would work.
Also, thinking back to the Brett strain, I sampled a Brett Trois that was added to one of our barrels that had a Sac fermentation and I was seriously impressed. Not sure if the hops will hide all the esters from it or not but it sure is tasty.

It is good 100%. I have had several similar beers with Brett trois
I see the Brett Trois is still available so would you rather use that strain? I am not tied to using Brett C. One question with the Trois is can you make a starter or does that throw the blend off?

I really want to try this beer, but my weekends are getting really full up quick leading up to the wedding in Dec. I think I might have to be sick, *cough, cough, cough* and get some brewing done.

I will double check that Drez. I thought I read in American Sour guys were propping Brett blends. Working today so my copy isn't on me. If someone has it this information should be in the 100% Brett section.
I will take a look at mine when I get home.

It hasn't been decided for sure. But the Trios is Avery's strain called Brett Drie. Its also the strain used in Super Friends and some batches of Sanctification. The book does not talk about making starters from blends and messing up the blends. So if we use this strain it might be better to pitch 2 vials per 5g instead of making a starter....Thoughts....
Brett C is fairly mild and have heard using it in a IpA the esters from the Brett are hard to distinguish from the hops. This strain would be better to make a large starter.
Pitching rates is suggested at 1.25 x 10 billion cells/ml......Any math guys out there want to figure this one out for the Trois? I have no idea how many cells are in a vial.
