Yea, my winter beers will be a West Coast IpA, Nelson Sauvin Wheat IpA, Dopplebock, and a few sours to consume. Still have a keg left of a Porter. 

 

a hoppy wheat beer isn't something I've made in a while.  :goodidea:

Just can't wrap my taste buds around NS and I have at least 3/4 pound of it left.

Im betting you are using to much. Light handed is the key for NS and Galaxy.

I'd have to agree. I made a Saison that could have passed for a carbonated Sauvignon Blanc (no sh!t). After a solid month in the keg it did calm down though.So how does one make an NS IPA while using the NS sparingly?

For IPA's: Citra, Cents and Amarillo

 

But I have yet to brew with Simcoe and Chinook. Will be rectified next year as they are both on my pre-order.

Hoppy American Ales - Columbus, Centennial, Simcoe

Farmhouse / German ales/lagers - Mt. Hood, Santium, Sterling - Maybe Vanguard as well. (I'm about ready to make the jump to all American Nobels)

What? No love for the english/irish/scottish beers and hops?  Losers!  :P

 

I like EKG (of US Goldings for that matter) or Fuggles.

I like hallertau for my german lagers but that's just me.  they are fairly lightly hopped so you can probably get away with different hops.

 

Yeah, I'd say Hallertauer and Tettnang.  And Citra and Mosaic will never be used here....probably.  :)

Farmhouse: Saaz, Motueka

German: Don't know them well enough to say.
