What hops would you choose?

I like hallertau for my german lagers but that's just me. they are fairly lightly hopped so you can probably get away with different hops.

I also should add that I like galaxy and nelson for hoppy beers. I also like to experiment with new varieties.

as time goes by I pretty much just want to make a few styles.
pale ales/IPAs/hoppy ambers: Chinook, cent, willy, simcoe, Amarillo, citra, Columbus, mt. hood (these are the ones I anticipate using the most)
lagers: hallertau, saaz, (although I may just start using mt. hood instead of hallertau)
I keep some magnum around for clean bittering, similarly I have some NB that was given to me by a friendly brews bro.
I do make some other beers, like stouts/porters and brown ales but really the hops used in these tends not to be as important.

pale ale/IPA is def first on the list. 75% of the time it's what I want. doesn't matter the season.

Hops and Sours for me. I will brew other styles for events we do through out the year so we will have a keg of whatever those might be around to fill in the holes but if Im brewing for us its very few styles anymore.

okay - I'll try. simcoe, Columbus, Chinook. (I'd really like to add cent or maybe citra here as well)

Yea, my winter beers will be a West Coast IpA, Nelson Sauvin Wheat IpA, Dopplebock, and a few sours to consume. Still have a keg left of a Porter.
