What hops would you choose?

I know this is a very endless loaded question and I know there’s no wrong answers but I’m curious what my Brothers would want.If you had to choose some hops for the coming year and could only pick 2 or 3 hops per style/batch/brew, what would they be? Choose a specific or loosely based style and share your choices.For my APA’s; Simcoe, Citra and MosaicFor my Farmhouse’s; Stryian Goldings, Strisselspalt and AmarilloFor my Faux Pils/German's etc; Magnum or NB and SaazHave at it, if you want....

I like hallertau for my german lagers but that's just me.  they are fairly lightly hopped so you can probably get away with different hops.

For my IPA/APA’s; Apollo, Simcoe, Citra. Amarillo, Chinook  and MosaicFor my Farmhouse’s; Stryian Goldings, [color=rgb(40,40,40);font-family:helvetica, arial, sans-serif;]Hallertau[/color] and Saaz

For my Faux Pils/German's etc; [color=rgb(40,40,40);font-family:helvetica, arial, sans-serif;]Hallertau[/color]

I also should add that I like galaxy and nelson for hoppy beers.  I also like to experiment with new varieties.

Yes, we are all experimenters/tinkerers thankfully... Have to keep it to 2 or 3. Hey, it's my game :)

as time goes by I pretty much just want to make a few styles.

 

pale ales/IPAs/hoppy ambers: Chinook, cent, willy, simcoe, Amarillo, citra, Columbus, mt. hood (these are the ones I anticipate using the most)

 

lagers: hallertau, saaz, (although I may just start using mt. hood instead of hallertau)

 

I keep some magnum around for clean bittering, similarly I have some NB that was given to me by a friendly brews bro.

 

I do make some other beers, like stouts/porters and brown ales but really the hops used in these tends not to be as important.

pale ale/IPA is def first on the list.  75% of the time it's what I want.  doesn't matter the season.

Yea, my winter beers will be a West Coast IpA, Nelson Sauvin Wheat IpA, Dopplebock, and a few sours to consume. Still have a keg left of a Porter.

Winter beers down here... if that's possible... Super Saison (w/ Amarillo)
