Why is Jay dumping four barrels (~1,200 bottles) of beer down the drain?!
Jay was tasting through some barrels and found that these four barrels had ethyl acetate aromas that were too high for our liking. At low levels, ethyl acetate can have a nice fruity aroma. However, at higher concentrations, ethyl acetate can smell like nail polish, and is considered an off-flavor.When we find barrels that have this off-flavor, we don't blend them into your sours. We dump the barrels with off-flavors, and only blend the good ones.
