20 bbl brewhouse, 40 bbl fermenters. All production (no brewpub/tasting room to start), all draft for the time being.

That's a tough way to do it. Lots of money in a tap room. Have to brew A LOT of beer.

Also check out Motor Row Brewing. It's a stone's throw from McCormick Place in Chicago. They should be opening next month. 10 bbl brewhouse, 10/20 bbl fermenters with a really nice tap room.
