2 # super fresh salmon, cut into half-inch cubes

1c soy sauce

2 Tbs Sesame oil

1c Sliced green onions

1Tbs toasted sesame seeds

Dash of chili pepper flakes or sriracha, depending on whether you are serving young kids or Irish.

Mix everything and chill it for 2 hours.  Serve cool.  Traditionalists would use tuna but salmon is really great in this recipe.

Sounds good, I would presonally cut that soy sauce down to half a cup, maybe even as low as a quarter.  I would probably also cut the sesame oil down by half.

Also add some finely diced jalapeno or other suitable chili pepper.  If you are using super fresh fish then use fresh peppers instead of something dried.  We occasionally also add some diced avocado as well and of course cilantro

Sounds more like a tataki than poke.. I'd hit it!
