After years of fermenting in 6 gal Better Bottles, I swithched to a 7.9 Gal Speidel fermenter. I liked almost everything about it especially the extra headspace so no more blowoffs like I usually had with my BB's, but the problem with the Speidel was that the spigot port was too low for the trub level. So I drilled a new hole in the side and installed the excellent Better Bottle racking port. Now the port stays well above the trub and lets me tip when racking to get the most clear beer possible.

Note also that I ditched the big and unnecessary Speidel airlock and just cover with plastic wrap.

I love my Speldel, however I find the opposite that the racking port may be a little high. But since it is gravity racking I just tip it at the end to get all of the beer out. For the airlock I found that the silicone carboy cap for the old standard 6.5 gallon glass carboy fits snuggly over the speidel airlock port and I just ran some tubing to a bottle filled with water/sanitizer.
