I'm thinking about buying a sack.  I've only tasted malted grains a few times and liked it every time.  I've always heard it's too "grainy" but I found it pleasant.  I want to try it and play with some unmalted stuff and use the diastatic power to convert it. Any thoughts?

Well?I can tell you this from my inexperience. It has (to me) a Special-K quality. "Cereal'y." I have been using it in my 'versions' of cream ales. On Sunday I did a Double cream with 8 lbs of 2 row, 2 lbs of 6 row and half lb each flaked corn and flaked barley. This particular recipe pleases the whole (adult) family. I think this is true because it it very easy drinking and is so approachable. All hops are noble and used conservatively. So try it. It lends a very rustic but familiar flavor.

Corn. Been looking to do some conversion experiments and want to use 6-row as the enzyme source.

NB had a 15% off today so I ordered 5 bags. One is 6-row. I think the first round will be Basmati rice with some of it lightly toasted. Then maybe some grits.

These days, there is virtually no difference in diastatic power between 2 row and 6 row.  2 row is a lot "hotter" than it used to be.

Corn. Been looking to do some conversion experiments and want to use 6-row as the enzyme source. 

 

Not necessary...won't hurt, but not necessary.

Just took a look and my one of my Rahr 2-row bags is 137 Lintner.  Honestly, I haven't paid attention to DP for a while.  Still, I'm looking forward to trying the 6-row since I liked munching on it but never brewed with it.
