I got an email today from Farmhouse supply about this strain which is a temporary/private collection yeast. Details...Wyeast 2002-PC Gambrinus LagerBeer Styles: Bohemian Pilsner, Vienna Lager, Dortmunder, Classic American Pilsner, Premium American Lager, Doppelbock, Dark American Lager, Traditional Bock, Schwarzbier.Profile: Czech-style lager strain with very mild floral aroma, nice lager character in nose. Malt dominates profile with subtle floral/fruit notes.Full, complex flavor profile with full mouth feel. Finishes soft and smooth with nice lingering maltiness.Alc. Tolerance 9% ABVFlocculation medium-highAttenuation 71-75%Temp. Range 46-56°F (8-13°C)Does anyone have any experience with this yeast? I admit that many strains that claim to be of "Bohemian" or "Czech" origin are on my radar. 2782 Staro was a great limited-release yeast and I do like 2000, 2001, 2278, 2124, 802. That low temp of 46° might be one of the lowest I have seen. The other new releases also include a Burton IPA and a Canadian/Belgian strain.

I got that email too and plan on fermenting several batches using this yeast. I have not used it yet. Need to get an order together.

I'm considering ordering it too. When I posted about this, my assumption was that this yeast had been released before and that some people may have experience with it. The more I thought about it, I considered that this could be its first release so we would all be in the same boat. I really wish I could get my hands on some 2782 Staro and my guess is that it came and went and I missed it. I'd love a resource for some of this stuff like MtnBrewer has his UCCS yeast bank connection. Anyway, let's compare notes on it. My guess is that I will be using it in a Czech-style lager that's 5%ish with an SRM of 5 or so and IBUs of 25-30. I may grab some hops from Farmhouse too... the hops I got from them last time were very nice.

I do a lot of Czech lagers as well. May do my 1.036OG Czech session amber and a big Svetle~7% alc. I usually run ~6 batches in a row from 1 pack of yeast.

I have this strain spinning on the stirplate right now. It'll get the drauflassen treatment to boost cell count. My brewing buddy and I are planning on 2 Vienna SMASHes--(he with Saaz, me with Saphir) followed by my standard Czech pils recipe, German pils recipe and Polotmave' Czech session amber recipe. Get a good feel for it. Stoked.

Keep me posted Chils. I made one batch with this yeast already (a gold lager, 5%, 25-30 IBUs, all noble hops, etc) and it's in secondary now. I made another one with about 15-20% RedX which would put the beer in the 7-8 SRM range, all Saaz on that one. I plan to make a helles with it next. The aroma I get when handling this yeast is outrageously good but then again I'm a sucker for Czech yeasts! :D

Me too man. You gotta try the Mangrove M84 sometime. It tastes very Czech to me. Made my best batch of Czech pils with it so far.

Oh yeah... I think we talked about that one and I remember how impressed you were. Refresh my memory... one pack or two, hydrated or not? Did you make a starter and Drauflassen it? I probably need to pick some up.

It has a low cell count per pack compared to Fermentis. ~ 50b vs 200b. When I ferment another batch with it, I will make a 2L starter with 1 pack then drauflassen it.If not doing that, I would do a 2L stepped to 4L with 1 pack. It's a little PITA to get running from dry but once it's going the harvests all ferment fine and leave beautiful light colored cakes.I'm hoping this 2002 has a similar flavor profile with slight esters and residual sweetness like I enjoyed with M84. I like my Czech beers with a distinct yeast character.
