Hey Fellas, here's a little something I 'm planning for Sunday.  Very anxious to use a new hop to me, Simcoe.  The base recipe is something I've made a couple times as I like the strength and the malt character is brings.  I added the barley and corn to this batch to assist in a deeper and creamier mouth feel.  I know to some I might be a little light on the Simcoe or all hops in general but I am not one to like very strong bittering.  Also the use of the Belle Saison just adds a little complexity to the flavor and also affords me to not worry about temp's too much.  Shooting for 148-150 in the mash.  As is I will pitch slurry in the low 60's and let it rise.  It will ferment in the mid 70's.
